  • 250g red onion
  • 200g cherry tomatoes
  • 150g celery
  • 200g sweet potato
  • 1 tsp salt
  • 50ml vermouth (optional)
  • 1 tin chopped tomatoes
  • 1 tbs Worcestershire sauce
  • 300ml vegetable stock
  • 2 tsp balsamic vinegar
  • 1 tbs tomato ketchup



    1. Finely dice the onions, tomatoes, celery and sweet potato.
    2. Saute the onions and celery in olive oil with the salt until they are soft and the onions are transluscent.
    3. Add the tomatoes, sweet potato and the rest of the ingredients.
    4. Bring to the boil and simmer for 20 minutes or until the vegetables are soft.
    5. Blend in a liquidiser until a smooth creamy texture is achieved.
    6. Reheat if necessary before serving.
