Ingredients:
- 250g red onion
- 200g cherry tomatoes
- 150g celery
- 200g sweet potato
- 1 tsp salt
- 50ml vermouth (optional)
- 1 tin chopped tomatoes
- 1 tbs Worcestershire sauce
- 300ml vegetable stock
- 2 tsp balsamic vinegar
- 1 tbs tomato ketchup
Directions:
- Finely dice the onions, tomatoes, celery and sweet potato.
- Saute the onions and celery in olive oil with the salt until they are soft and the onions are transluscent.
- Add the tomatoes, sweet potato and the rest of the ingredients.
- Bring to the boil and simmer for 20 minutes or until the vegetables are soft.
- Blend in a liquidiser until a smooth creamy texture is achieved.
- Reheat if necessary before serving.
